Sydney has a timely reason to head for the coast: Sculpture by the Sea is scheduled along the Bondi–Tamarama walk through November 2. Give it a proper outing if the weather and your energy cooperate. Save the harbour checklist for another day.

On the coast this week
The exhibition dates are October 16–November 2. Sculpture by the Sea's organizer lists the free outdoor exhibition on the Bondi–Tamarama coastal walk. Check current access and weather before travelling; the dated programme is not a guarantee about today's conditions.
Use public transport and allow for people. The organizer's getting-there guidance recommends public transport and lists special event clearways on exhibition weekends. Parking near the beach is a poor thing to leave undecided. Check the actual service for your day.
Bondi to Tamarama can be the whole plan
You do not need to extend the exhibition walk all the way to Coogee to make the journey worthwhile.
Choose the section you can comfortably walk, leave space to stop, and keep the exit route saved. Crowd movement, steps, photos and a food stop can make an apparently short distance take longer than a map suggests.
Check the forecast and UV conditions. Carry water and sun protection. If the wind, rain or your energy make the exposed path unappealing, choose a different outing. The date on the exhibition does not make you obligated to go.
What I would remove is the added Manly ferry, Opera House stop and cross-city dinner. Each can make a fine Sydney visit. Together after a coast walk, they become a lot of travel between things you are too tired to enjoy.
If you wake up exhausted, make the plan smaller from the start. Bourke Street Bakery in Surry Hills is in the guide for a savory bake and a coffee, with a tart if you want one. Check the branch and current range before leaving. Ask about fillings and allergens rather than ordering by appearance.
Use a nearer meal if getting to Surry Hills would take more effort than the outing is worth. A bakery stop followed by sleep is a sensible choice after a long sector.
For the harbour version, pick a public waterfront walk and one meal. For the coast version, make the exhibition the anchor. The Sydney guide helps you choose between them and account for getting back to your accommodation before crew pickup.
Crew move
Check the complete journey back to your accommodation before the last stop. Include walking, waiting and connections, plus time for rest and preparation before crew pickup. A ferry adds its own timetable; leave on an earlier workable service.
In the bag
A hat, water bottle and sun protection. Keep your phone charged for the trip back. Add a layer if the current coastal forecast calls for it.

Madrid: a market meal and an art visit you do not need to turn into a three-museum challenge.
